OK I cheated a bit on this one. Instead of making meatloaf from scratch I purchased a six pack of Stauffer’s. This gives us three meals. With scalloped potatoes on the side it’s a nice hardy meal, especially in the winter time.

Following the directions pre heat the oven to 375 degrees. When ready place the meatloaf in. I placed it on a a cookie sheet which makes it easier to get out of the oven. Bake for 65 minutes.

While the meatloaf is cooking you can prepare the scalloped potatoes. Following the directions on the box Add the potatoes and sauce packet to water and bring to a boil then reduce to about medium. Stir frequently so they do not stick to the bottom or sides of the pot. They take perhaps 8-10 minutes to become soft and creamy. When ready turn off the heat.

When the meatloaf is done pull it out of the oven and place on your cooktop as it will be hot. Let it rest for 5 minutes.
Then with a large spoon place a patty on your plate along with the potatoes. I like to pour some of the gravy over the patty and potatoes.

Serve and enjoy a hearty and economical meal.
